Tofu and Peas curry

Tofu and peas go very well together. It is easy to prepare and quick. It is also a gluten free recipe. This is an Indian recipe and requires some Indian style spices which can be found in a grocery.

Ingredients:

  • 350 grams of tofu
  • 1 cup peas
  • 1/2 teaspoon cumin seeds
  • 1 cup onion chopped
  • 1 teaspoon coriander seeds finely crushed
  • 2 tablespoon ginger paste
  • 2-3 cloves of garlic finely chopped or minced
  • 1 tablespoon of crushed fennel seeds
  • 3 chopped tomatoes
  • 1 teaspoon red chili flakes (optional)
  • 1 cup peas
  • 2 cups water
  • 3 tablespoon oil for cooking and some for sautéing the tofu
  • 1 teaspoon salt
  • 1 teaspoon turmeric
  • 1/2 teaspoon Garam Masala

Preparation:

  1. Heat pan at highest and add cooking oil.
  2. Then add the tofu and let cook till light brown.
  3. Heat 2 tbsp oil in a wok.
  4. Fry cumin, fennel, and coriander for 30 secs and add onions, ginger, and garlic.
  5. Mix well and add salt, turmeric, and red chili flakes.
  6. Cook until onions are golden brown.
  7. Once masala looks ready, add tomatoes and peas.
  8. Cook until tomatoes are soft and tender looking.
  9. Then add water and bring it to boil.
  10. Add tofu pieces and let them simmer in the curry for 3 mins.
  11. Add Garam masala and let cook for 1 minute then serve hot with rice or any other accompaniment.

Tofu and Kale salad

This is a healthy and delicious salad, it is simple and very tasty. This can compliment any meal and will leave you wanting for more as it is full of flavor. Children will love this due to the crunchiness of the tofu.

Ingredients:

  • 2 cups Kale stalks removed and leaves thinly sliced
  • 1 cup of firm tofu in small cubes and pat dry
  • 1/2 cup of sliced apple
  • 1/2 cup cucumber cubed in small pieces
  • 2 tablespoons dry cranberry
  • 2 tablespoons sliced almonds toasted
  • 1 tablespoon olive oil
  • 1 tablespoon ginger juice
  • 1 teaspoon lemon juice
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon sugar

Preparation:

  1. Add ½ teaspoon oil, ginger juice, salt, sugar, black pepper and squeeze about 1 teaspoon of lemon juice and mix for 2 minutes into the kale leaves until they soften.
  2. Leave it to marinate for 10 minutes.
  3. Roast the almonds in a pan without oil then remove set aside and then put some oil in the pan and add tofu to fry it till brown then remove.
  4. Take the apple, tofu, cucumber, and cranberry and toss it together in a bowl with the kale and mix them well.
  5. Serve and garnish with some more almonds for a nice crunchy flavor.

Tofu and shrimp stir-fry

This is a very simple dish with some simple ingredients. It can be made out of scratch and does not require a lot of time. You can enjoy this for lunch and dinner.

Ingredients:

  • 1 package tofu
  • 1 package shrimp
  • 1 teaspoon Garlic paste
  • 1 cup Green onion finely chopped into scallions
  • Cayenne pepper
  • Chili powder
  • 1 teaspoon starch

Preparation:

  1. Add some garlic paste to the shrimp and some sesame oil as well as chili powder and cayenne pepper.
  2. Then add the starch and mix it and let rest for 5 minutes.
  3. Heat a pan and add cooking oil.
  4. Then add onion and garlic paste and let fry.
  5. Then add some green onion and mix then well.
  6. Add the dry tofu to the mix and then add the shrimps and some more oil if required and let them cook till brown for 5 minutes approximately.
  7. Check and add the remaining green onions.
  8. Let cook for one more minute then serve hot.

Tofu fried rice

This is a Chinese style tofu recipe and is quick and easy. It is suitable for dinner time and can be made from scratch.

Ingredients:

  • 1 cup tofu chopped and fried
  • 1 and ½ cup rice
  • 1 cup onion
  • 1 cup carrot
  • 1 cup green pepper
  • ½ cup yellow pepper
  • ½ cup red pepper
  • 1 cup mushrooms chopped
  • ½ cup green onion finely chopped
  • 2 tablespoon soy sauce
  • 2 tablespoon sesame seed oil
  • Garlic paste
  • Ginger paste
  • Chilli paste (optional)

Preparation:

  1. Heat a pan and add sesame seed oil.
  2. Add ginger paste, garlic, and chili.
  3. Then add onions, pepper, carrots, mushrooms, and other veggies and stir fry it for 2 minutes.
  4. You can add any vegetable of your choice.
  5. As they cook they shrink so keep stirring.
  6. Then add the fried tofu and stir for 1 minute and add soy sauce.
  7. Then add the rice and stir again and add some salt for taste.
  8. If required add some more sesame oil and soy sauce and keep stirring till all is combined.
  9. Serve hot with a nice egg omelet.

Tofu Burrito

Tofu burrito! Yummy, crunchy and tasty, full of flavors and will leave your mouth watering. This is easy to make and requires simple ingredients. This is a great recipe for vegan people.

Ingredients:

  • 1 cup tofu cut into chunks and dried
  • 1 flour tortilla or a wrap
  • 1/2 cup of minced  tomato
  • 2 tablespoon avocado
  • Some spinach
  • 1 Garlic clove finely chopped
  • Some onion finely chopped
  • 1 jalapeno or bell pepper
  • Oil

Preparation:

  1. Heat some oil in a pan or a non-stick skillet then add your garlic and onions and let fry till tender.
  2. Then add the tofu and let fry together.
  3. After 3 minutes add the other veggies except for avocado. Let it stir-fry.
  4. Meanwhile, take your tortilla and heat it in a non-stick pan for some seconds for crunchiness, you can use some lettuce or spinach and place one leaf or two then the avocado paste.
  5. Now remove your tofu stir fry from heat and add as much as you want to your tortilla.
  6. Fold it and heat for some seconds again to seal it and enjoy the burrito!
