Tofu and Eggplant

This easy tofu recipe is one of the most amazing ways to eat tofu. Eggplants contain a lot of vitamins which are good for the heart. You can use any vegetables that you want along with the eggplant.

Ingredients:

  • 1 package tofu
  • 1 cup of eggplant chopped into chunks
  • ½ red pepper, cut into pieces
  • ½ green pepper chopped
  • 1 onion, peeled and chopped
  • 2-3 peppers cut in half lengthwise
  • 2 cloves garlic minced
  • 1 teaspoon chopped fresh ginger
  • Basil leaves
  • Oil

For the sauce:

  • 1 tablespoon soy sauce
  • 1 teaspoon mushroom sauce
  • 1 teaspoon sugar
  • 2 tablespoons water
  • Salt and pepper as per your taste

Preparation:

  1. Cut the tofu into small cubes and absorb excess moisture with a paper towel.
  2. Marinate the tofu with sauce ingredients. Mix them all well and let it rest for five minutes.
  3. Heat the oil in a large wok or non-stick skillet over medium heat.
  4. Sauté the tofu (with sauce or you can drain it) and both peppers until the tofu pieces are well fried on both sides.
  5. Remove excess oil by placing a piece of tissue paper.
  6. Heat the oil in the wok over high heat. Add minced garlic and ginger and let jump for a few seconds.
  7. Then add the onion, eggplants and basil leaves.
  8. Stir occasionally until eggplant is cooked. It takes about 20 minutes of cooking.
  9. Add the peppers and cook two to three minutes.
  10. Then add the sauce and cook for a minute.
  11. Add a cup of water, cover and simmer for ten minutes more.
  12. Then add the teokon. Mix well.
  13. Serve hot enjoy!

Tofu and Stir-Fry veggies

This is a 10-minute tofu stir-fry recipe, so easy and mouthwatering! Any vegetable can be added to this stir-fry and make it look colorful and attractive.

Ingredients:

  • 1 package tofu drained and cut in cubes
  • 1 cup sliced mushrooms
  • 1 cup broccoli cut into chunks
  • 1 cup chopped Bak Choy (separate stem and leaves)
  • 1 teaspoon ginger paste
  • 1 teaspoon grated Garlic
  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon water

Preparation:

  1. Heat some vegetable oil (1 tablespoon)
  2. Add tofu and let fry till light brown then remove from pan and keep aside.
  3. Add sesame oil to a pan and add garlic and ginger paste.
  4. Sautee for 30 seconds.
  5. Then add all the vegetables and let cook for 3 to 4 minutes.
  6. In the meantime mix soy sauce and oyster sauce in a bowl and some water.
  7. Then pour it into the cooking veggies.
  8. Let cook for some seconds and top it with the fried tofu, mix well then serve it hot!

Tofu and Chicken Stir-fry

You just need a handful of ingredients and this can be made from scratch. It does not require much time either and is great for a quick lunch with rice.

Ingredients:

  • 1 pound of chicken breast sliced thinly
  • 1 Package tofu
  • 2 cups of raw mixed veggies chopped into bite-size pieces (carrots, broccoli, mushrooms)
  • 2 Tbsp of Soy Sauce
  • 2 Tbsp of Water
  • 2 Tbsp of Oyster Sauce
  • 1 tablespoon Vegetable Oil
  • 1 teaspoon of garlic paste
  • 1 Tablespoon of ginger paste

Preparation:

  1. Preheat pan or skillet at highest then add chicken and let cook till they look cooked.
  2. In another bowl add water, soy sauce and oyster sauce for your stir-fry sauce, whisk it well and set aside.
  3. Remove the chicken from pan when cooked and set aside.
  4. Drizzle some vegetable oil in a pan then add your vegetables and let cook for 3 minutes.
  5. Then add the chicken to the cooking veggies, garlic paste, ginger paste and stir it.
  6. Then add the sauce you prepared and enjoy the good smell!
  7. Let cook for 3 minutes more and serve hot.

Spicy tofu curry

This easy spicy tofu recipe is tasty and spicy and will kick-start your senses! Crispy on the outside and soft on the inside. It’s a delicious side dish for rice, boiled noodles or you can eat it without accompaniments.

Ingredients:

  • 1 package tofu
  • 2 tablespoon cooking oil
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic paste
  • Half cup finely chopped onion
  • 1 cup chopped green onions for color

For the sauce:

  • 1 tablespoon soy sauce
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 tablespoon hot pepper flakes
  • Half cup water

Preparation:

  1. Add cooking oil to a pan or skillet and heat on highest then add tofu and let fry for 5 to 7 minutes till golden brown.
  2. Transfer the tofu to a plate and add onion garlic, green onion to the heated pan and let stir till crispy.
  3. Then add the spicy sauce and let it thicken.
  4. After 2 minutes add the tofu and let cook on medium heat.
  5. Then add some sesame oil and stir.
  6. Serve hot and can garnish with some more green onion leaves.

Tofu tomato soup

This easy tofu tomato soup is great for lunch as it is very light and easy made. It can be consumed with bread as an accompaniment. It is quick and easy and does not require too much of your time to prepare. It tastes delicious and is good for your health.

  • Half package tofu
  • 2 big tomatoes chopped roughly
  • Oil
  • Green onion
  • Salt
  • Stock
  • Some dried seaweed

Preparation:

  1. Heat some cooking oil in a pan, then add the chopped tomato and let cook till smooth.
  2. Then add some stock to it as well as the dried seaweed and let cook.
  3. After 3 minutes add the chopped tofu to the stock and let cook for 3 minutes more.
